Swiss wrestling (Schwingen), the Swiss duel in sawdust, combines tradition and dynamism. Men and women fight with skillful swings and special swing pants to bring the opponent to the ground. The “bad guys”, the best in this sport, treat each other with respect. A wrestling match begins and ends with a handshake and the winner has the honor of brushing the sawdust off the loser's back. Originally a test of strength between dairymen and shepherds, wrestling has developed into a popular national sport.

Fun Fact

  • Swiss wrestling is also called “Hosenlupf” in Switzerland.
  • On average, a person burns around 2,000 calories per day. The wrestlers consume up to 8,000 calories on competition days.

Swiss wrestling fountains, -trousers and small-sized sawdust rings decorate this table.

Ingredient 01

Appenzeller Alpenbitter

42 herbs, flowers, roots and spices give Appenzell Alpine bitter its typical taste. The recipe has been a well-kept family secret since 1902. Even today, only two members of the founding family know the list of ingredients.

Dish

The praline in the shape of a curling stone is a spirited product with Appenzeller Alpine bitters.

Ingredient 02

Hay

Hay is dried grass that is used as food for animals, especially ruminants. Drying makes grass last longer and stores it in bales or in bulk. Hay is an important source of food, especially when fresh grass is not available, such as in winter or during drought.

Dish

Sea buckthorn hay ganache with rosehip butter cream make the cyclist praline (Swiss German: the bike praline) perfect.

Ingredient 03

Zwetschgen Luz

Opinions differ about Cafi Luz.. Kafi Luz, also called “coffee ready” or “Kafi träsch”, is a cult drink that depends on the quality of the ingredients and the right mixing ratio. The variant with a good plum brandy is popular today. It is assumed that the name Kafi Luz is the Swiss German abbreviation for Lucerne coffee - the original recipe is said to come from the area around Lucerne.

Dish

The taste of the plum Luz is the focus of the vegan praline.

Ingredient 04

Cherry (Kirsch)

A good kirsch is considered a fine distillate that is drunk pure and sip by sip. The ideal drinking temperature is between 14 and 16 °C. Wild cherries or distilled cherries are used for cherry brandies because they are more aromatic than table cherries. Cherry brandies are also good for flavoring cheese fondues or various desserts such as vermicelles, the popular Swiss chestnut puree.

Dish

The Swiss Wrestling praline consists, among other things, of white chocolate mousse with cherry. The decoration consists of a small chocolate apple with an arrow and tells the story of the Swiss freedom fighter William Tell.

Ingredient 05

White Toblerone

The white Toblerone is a combination of the finest white chocolate with honey and almond nougat.

Dish

We use the white Toblerone for the curling praline.
