Too good to throw away: Brewbee uses by-products from the Appenzeller Locher brewery - spent grain, brewer's yeast and secondary wort - for sustainable and vegan food. Currently there are pizzas, chips, cereal, grain flakes as well as plant-based minced and sliced meat - meat alternatives with a high protein content.

Frutiger Sturgeon

The tropical house Frutigen is considered a pioneer of sustainable fish farming. The 18 degree warm and high quality water from inside the Lötschberg is the ideal environment for the Siberian sturgeon. Local fish such as perch are now also bred.

Dish

The intermediate course consists of sautéed sturgeon, sturgeon mosaic, tortellini, wild broccoli, broccoli cream and beurre blanc - and promises delicate flavors.

Ribelcorn Poularde

The longer rearing and the special feed make the difference: For Ribelcorn poulards, slow-growing breeds are raised in small flocks in a species-appropriate manner - fed with a special grain mixture, which largely consists of Rhine Vally Ribel Corn AOP. This makes the chickens a tasty delicacy.

Nothing beats a rich chicken broth! Combined with chicken gyosa and corn variation, we achieve perfect harmony.

Beef fillet and beef ragout

Long transport routes stress and frighten farm animals. An alternative is yard and pasture killing. The animals are stunned and killed on site and only then transported to the slaughterhouse, which reduces suffering and improves meat quality. Since 2020, this alternative slaughter method has been permitted throughout Switzerland and under strict conditions.

Dish

Beef fillet is a delicacy, but other cuts of meat are just as good. In this dish, the fillet is combined with a tasty beef shoulder ragout.
